Exceptis - Blanc De Noirs Dosaggio Zero Cherubini Chianti and unoaked100% Pinot Noir, vinified in white. The harvest takes place between the end of August and the beginning of September. The whole grapes are lightly pressed. Secondary fermentation takes place with approximately 15% of reserve wine, aged in barriques. After a minimum of 24 months of aging, disgorgement occurs, and the same wine is used for topping up. Disgorgement February 2024
