On the nose, pronounced aromas of ripe fruit, bell pepper, honey, wet stone and smoldering campfire. The palate is lively with rounded notes of cooked agave, caramelized pineapple and fresh herbs that give way to a subtle smoky smooth finish and a full mouth feel. Roasted for 5 8 days in underground pits before a ten day to two week fermentation. Double distilled.
